Yes but that instance is connected to other fediverse apps, not everyone is from the same instance as you

Not following your problem. You're saying you can't login to another Lemmy instance that's unstable?

No, you see, the issue is, that if everyone were on one instance, then if that instance went down, it'd be more like how reddit was with the constant "you broke reddit". At least I think that's their problem.
