Honestly, it's probably not worth the hassle to try to install system apps elsewhere. Steam and Lutris, on the other hand, can put games on any mounted drive. Install them as normal, and then in Steam, set up a steam library in /Apps
. In Lutris, you should have the option to choose where each game is installed each time you install one.

Be helpful
Posts to pop_os must be helpful. When responding to a user asking for help, do not provide tongue-in-cheek responses like "RTM" or links to LMGTFY. Linking to direct sources that answer the asker's question is fine, but it's advised to provide some explanation as to how you got to that source.
Critique should be constructive
We within the Pop!_OS community welcome helpful criticism or ideas on ways to improve. However, basic "It's bad" or other simple negative comments don't help anyone fix anything. When voicing a complaint about something, try to point out ways the complaint could be improved or worked around, so that we can make a better product for it.
This rule applies to both Pop!_OS and its projects as well as other products available from third-parties.
Don't post malicious "advice"
It can be funny to joke about malicious commands, however this is not the venue for it. Do not advise users to run commands which will lock up their systems, steal their data, or erase their drive. Examples of this include (but are not limited to) fork bombs, rm, etc.
Posts violating this rule will be removed, even if the post is clearly in jest. Repeated offences may lead to a ban. You may understand that the command isn't serious, but a new user might not.
No personal attacks
Posts making a personal attack on any user will not be tolerated.

Agree with Frozen here. Outside of AppImages which can go where ever (I usually do /opt) I would let most things install where they default to. I installed steam directly from their repo (not s76/ubuntu/debug repo) And had no issues. I have an additional drive in that has a specific mount point in my home dir and games install there. Sounds like you may be new to Linux? It takes a bit to get used to the different mindset of Linux but I’ve found over the years that backing up my apps isn’t really as big of a deal in Linux, especially these days with flatpak and snaps and appimages, etc. I’d be more worried about storing media (photos, videos, music, etc) in its own drive or partition. if you are new to Linux and I’m not projecting here, you should think about joining the PopOS Mattermost. A lot of good folks there always willing to help.
I've run a Raspberry Pi with PiHole for years on top of playing with Pi's and trying out distros with USB boot. I'm new to the day to day reality of living with Linux. So yeah, I'm still shifting my mindset to full time Linux. Great thing is Linux has improved so much. It's a long way better than trying to install Slackware in the late 90s.
And I went burn-the-ships with this move. I'm not dual booting, I backed up files, and formatted everything.
I did the same jump, the same way last year. I'm still daily driving Pop_OS! After a year. I went through much the same way when I can over from windows with program placement. Welcome to the club.

I found a comment on another website that said you have to install Steam/Lutris from the PopOS Deb package and not the flatpak. I know they were installed by flatbak from the Pop OS store. So uninstalled and reinstalled as the Deb package and I can know swap the install directory for games to another drive. One more step down in my Linux switch.
You can install any app anywhere by hand. Download binaries, put them anywhere you want for example home/.local/bin and add that location to your PATH. Most package managers install apps system-wide ie somewhere in root.
