Doom 2016 and Doom Eternal are extremely well optimized as far as modern games go. Even in 4K with maxed out settings, they won't really push a mid range GPU unless you have a 4K 120Hz monitor.
Yeah but on a high end computer they will look absolutely sick
Skyrim with a lot of mods. That's what I have been playing a lot recently, and I have a somewhat mid/high end system. It's a HP Omen 17-ck1000, A gaming laptop. i7-12700h, RTX 3060, 32gb ram.
7 Days To Die is a fantastic game - if you like that sort of thing. You can usually get it cheap during the sales. It will definitely "stress" your system.
This is a super fun game solo or with friends.
A large stelarris map at max speed pushes the cpu quite a bit. Doesn't really use the gpu though.

Mortal Online 2 is sandbox MMORPG that is amazing and looks great for a MMO.
Everspace 2 is cool and looks great.
Satisfactory, Microsoft Flight Sim, Farming Sim, trucking sims, modded Minecraft, Cities Skylines. Don't know any games that stress CPU much
