I see it promoted so much on F1TV but does anyone actually engage with this "F1 Fantasy" stuff. Am i too old to understand why this should be interesting?

I don’t do it personally, but it does seem like a lot do. Fantasy Football/Basketball/Baseball are all huge here in the states, and they’re trying to capitalize on that
Literally millions of people. The biggest F1 Fantasy league for 2023 on the official site has 1.4 million active users.
I tried it when it came out a few years ago, but I got bored of it pretty quickly. I think it's fun if you get a few friends onboard
