I have an issue where if I'm gaming online on WiFi and my son boots up his fire tablet and starts streaming the ping shoots up and I have major latency issues. It's only this one device that creates any issues for me that I've noticed. Has anyone here had a similar issue to this and know of a fix?

Sure, stop using wifi for tasks like that.

Use a hardwired Ethernet instead.

Hardwired is the best advice. Otherwise get WiFi that supports fq_codel for the wireless devices. Eero does this. Or roll your own using OpenWrt.
