Yeah Eaton are great actually. Wish you luck. It’s a viable solution. I am living proof of it. I do wish Ecoflow switch to battery was instant like some other solar power station and not 30ms.

I actually use solar from Renogy. I use 4 x 100watt solar panels in 2s/2p configuration. It’s on a fix structure (my gazebo) I was like I need a place to put them and I don’t want to climb up to my second story roof lol.
I maybe able to give some feedback. I am currently doing that as my setup for a good year. Outlet/Solar panels -> Ecoflow Delta 2 (with extra battery) -> Cyberpower 1500 UPS -> PDU -> Server/networking/NAS equipment
So far so good no issues. During the summer I take advantage off peak hours. So I let ecoflow to power my equipment during the summer afternoon. Since I am getting about 300-400watts of solar power during that time. The rest of the time like the winter. I just let it do its things. Since daylight isn’t abundant nor consistent and you would want available power during emergencies.
I’m using a UPS that is plugged into a EcoFlow power station which uses LiFoPO4 battery
