You can either get a 4G / 5G outdoor antenna or change your mobile provider hoping it's better than the old one.

Otherwise, there isn't much you can do.

I have a Mac mini (Intel) I plan to use as a server for self-hosting a couple of services for personal use and from time to time for deploying a client's demo. Which kind of firewall do you think would be best? Is it worth it investing in an independent physical firewall?

It's overkill. Here where I live, only businesses invest in that much. Most users are happy with 150-250mbps.
